Date Ball Series: Cherry Pistachio

I’ve been thinking of ways to mix up the date ball recipe I’ve come to know and love. I’m a person of habit, so change isn’t always my favorite thing in the world. But lately ideas have been popping into my head about other flavors I could easily make using the base of my Chewy Chocolate Date Balls recipe.


With a few adjustments to take into account the different consistency of ingredients, these came out amazing! The flavor isn’t too powerful, but it’s just the right amount. With the nuts, the texture is a bit more oily and chewy because of the pistachio’s natural oils. To offset this, you can add more oats if you’d like the balls to be more firm.


Cherry Pistachio Date Balls

A variation of my Chewy Chocolate Date Balls, these sweet treats are a perfect snack to curb your cravings! The mixture of dried cherries pairs really nicely with the subtle nuttiness of the pistachios.

**If dealing with dates on the drier side, let them soak in warm water for about two minutes. Don’t soak them for too long because the water will absorb their flavor and sweetness. Drain the water and add the dates to the food processor as instructed in the directions. Because of the nuts, the texture will be more oily and chewy. Feel free to add 1/4 cup of oats if you’d like your treats to come out a bit more on the firm side (personally I didn’t add more because I loved the texture).


  • 2/3 cup pitted dates (about 8-10 dates depending on their size)**
  • 1/3 cup dried cherries
  • 1/3 cup unsalted pistachios
  • 1 tsp vanilla extract
  • 1 cup oats (best with Bob’s Red Mill Rolled Oats but completely fine with any other kind of oats like Quaker’s One Minute)


  1. Use a food processor to blend the dates until it creates a paste-like texture. There should be no bits left.
  2. Add in the dried cherries, pistachios, vanilla extract, and oats.
  3. Turn on the food processor and mix the ingredients. Keep the processor going until the ingredients fully combine to form a ball on their own. **If after waiting 5 minutes of processing and the ingredients don’t form a ball, add one date at a time until it does. Wait at least a minute in between adding dates to make sure you don’t add too many.
  4. Roll the mixture into balls and they’re ready to go! You can roll the balls as little or as big as you’d like. This recipe will make 14 balls about 1 inch in diameter.
